Parmesan Chicken

Okay. This really shouldn't be called Parmesan Chicken. It's my great Aunt's recipe (slightly tweaked by me) and that's what she named it -But, it's too close to Chicken Parmesan and they are not at all alike - any one have a better name for it?


I LOVE this. I love that it is So easy. I love that it is SO good. I love that it is the epitome of comfort food.. I love that it is Easy... did I say that it was so easy? It's perfect for Sunday dinner, and much less expensive then a roast.



Parmesan Chicken










Ingredients:
3-4 boneless skinless chicken breasts (Tip: Chicken breasts are HUGE, slice the chicken laterally to form 2 thinner breasts.. your meal will go twice as far and you will have a much healthier portion.)
1 1/2 cubes of butter melted
1- 1 1/2 boxes of chicken stove top stuffing

Mix together and then add to stuffing:
1/2 c grated parmesan cheese
½ t onion powder
½ t garlic powder

Directions:
First - prepare a cake pan by greasing and lightly cover the bottom with some of the stuffing mixture. Dip chicken in butter and then roll in stuffing mixture. Place in greased bake pan. When finished, pour the rest of the stuffing, and then butter on top of chicken. Cover with foil. Bake at 350 degrees for 40 minutes. Uncover and bake 15 minutes if needed.



Okay! Let's get started! You know my post "Don't waist a single?" ... well! I was watching a show that gave me a few ideas- you can save and use your butter wrappers to grease your pans instead of using cooking spray. (Mike thinks I'm crazy.. oh well :) ) - If you are using oil for another recipe, use a cloth to rub some of the oil left in the measuring cup you used to grease your pans)





Melt Butter in one shallow container and mix the dry ingredients in another. Dip chicken breasts in butter......



Then roll in stuffing mixture......




Place in Pan







Pour remaining stuffing mixture




Pour remaining butter over that...







Cover and bake according to instructions and serve with potatoes and carrots. You will be your kids', spouses, friends- BEST friend :) Enjoy! Let me know if you think of a better name.

This is a fantastic recipe! One of the best and I second the comfort foodness of it! The original calls for salt, salt and more salt but if you are using stove top then you do right by using powder instead. I always use less salt also. Who's recipe was that?
